Crispy buffalo wings made easily in your air fryer, finished with a classic butter and hot sauce coating.

  • 2 pounds chicken wings, separated into drumettes and flats
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 tablespoons unsalted butter
  • 1/2 cup buffalo wing hot sauce
  • 2 tablespoons blue cheese dressing (optional)
  • 2 tablespoons chopped fresh parsley (optional)
  • Celery sticks, for serving
  • Blue cheese dressing, for serving

Instructions

  1. Pat the chicken wings completely dry with paper towels. This is crucial for crispiness.
  2. In a large bowl, toss the wings with baking powder, salt, and pepper until evenly coated.
  3. Arrange the wings in a single layer in your air fryer basket. Do not overcrowd. You may need to cook in batches.
  4. Air fry at 400°F (200°C) for 20-25 minutes, flipping the wings halfway through, until golden brown and crispy.
  5. While the wings are cooking, melt the butter in a small saucepan over low heat. Stir in the buffalo wing hot sauce.
  6. Once the wings are cooked, transfer them to a clean large bowl. Pour the warm sauce over the wings and toss to coat evenly.
  7. Serve immediately with celery sticks and blue cheese dressing, if desired.

Notes

  • For extra crispy wings, ensure they are completely dry before seasoning.
  • If you don’t have baking powder, you can skip it, but the wings may not be as crispy.
  • To keep wings crispy for parties, place them on a wire rack over a baking sheet in a single layer and keep them warm in a low oven (around 200°F or 95°C).
  • Adjust the amount of hot sauce and butter to your preference. A common ratio is 1:1 butter to hot sauce, but you can use more hot sauce for a spicier wing.
