2 pounds chicken wings, separated into drumettes and flats
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon black pepper
4 tablespoons unsalted butter
1/2 cup buffalo wing hot sauce
2 tablespoons blue cheese dressing (optional)
2 tablespoons chopped fresh parsley (optional)

Instructions
Pat the chicken wings completely dry with paper towels. This is crucial for crispiness.
In a large bowl, toss the wings with baking powder, salt, and pepper until evenly coated.
Arrange the wings in a single layer in your air fryer basket. Do not overcrowd. You may need to cook in batches.
Air fry at 400°F (200°C) for 20-25 minutes, flipping the wings halfway through, until golden brown and crispy.
While the wings are cooking, melt the butter in a small saucepan over low heat. Stir in the buffalo wing hot sauce.
Once the wings are cooked, transfer them to a clean large bowl. Pour the warm sauce over the wings and toss to coat evenly.
Serve immediately with celery sticks and blue cheese dressing, if desired.
Notes
For extra crispy wings, ensure they are completely dry before seasoning.
If you don’t have baking powder, you can skip it, but the wings may not be as crispy.
To keep wings crispy for parties, place them on a wire rack over a baking sheet in a single layer and keep them warm in a low oven (around 200°F or 95°C).
Adjust the amount of hot sauce and butter to your preference. A common ratio is 1:1 butter to hot sauce, but you can use more hot sauce for a spicier wing.
