Crispy, flavorful corn ribs seasoned in an elote style, perfect as a snack or side dish.

  • 4 ears of corn, husked
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt to taste
  • 1/4 cup crumbled cotija cheese
  • 2 tablespoons chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. Carefully cut each ear of corn lengthwise into quarters. You should have 16 corn ribs.
  3. In a bowl, toss the corn ribs with olive oil, chili powder, smoked paprika, garlic powder, onion powder, and salt until evenly coated.
  4. Arrange the corn ribs in a single layer in the air fryer basket. You may need to cook in batches.
  5. Air fry for 10-12 minutes, flipping halfway through, until the corn is tender and slightly charred and curled.
  6. Remove the corn ribs from the air fryer and place them on a serving platter.
  7. Sprinkle with cotija cheese and fresh cilantro.
  8. Serve immediately with lime wedges.

Notes

  • To cut corn ribs safely, place an ear of corn on a cutting board and hold it steady with one hand. Use a sharp knife to cut it in half lengthwise. Then, cut each half in half again lengthwise.
  • For a spicier kick, add a pinch of cayenne pepper to the seasoning mix.
  • If you don’t have cotija cheese, feta cheese can be substituted.
  • Serve with a side of crema or a chipotle aioli for dipping.
  • This recipe is a lighter alternative to deep-fried corn.
