Ingredients
Scale
4 ears of corn, husked
2 tablespoons olive oil
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Salt to taste
1/4 cup crumbled cotija cheese
2 tablespoons chopped fresh cilantro
1 lime, cut into wedges
Instructions
Preheat your air fryer to 400°F (200°C).
Carefully cut each ear of corn lengthwise into quarters. You should have 16 corn ribs.
In a bowl, toss the corn ribs with olive oil, chili powder, smoked paprika, garlic powder, onion powder, and salt until evenly coated.
Arrange the corn ribs in a single layer in the air fryer basket. You may need to cook in batches.
Air fry for 10-12 minutes, flipping halfway through, until the corn is tender and slightly charred and curled.
Remove the corn ribs from the air fryer and place them on a serving platter.
Sprinkle with cotija cheese and fresh cilantro.
Serve immediately with lime wedges.
Notes
To cut corn ribs safely, place an ear of corn on a cutting board and hold it steady with one hand. Use a sharp knife to cut it in half lengthwise. Then, cut each half in half again lengthwise.
For a spicier kick, add a pinch of cayenne pepper to the seasoning mix.
If you don’t have cotija cheese, feta cheese can be substituted.
Serve with a side of crema or a chipotle aioli for dipping.
This recipe is a lighter alternative to deep-fried corn.
