- 8 oz feta cheese
- 2 cups cherry tomatoes
- 3 cloves garlic, minced
- 1/4 cup olive oil
- 1/2 tsp red pepper flakes
- 8 oz gluten-free pasta
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
- Preheat oven to 400°F.
- Place feta and tomatoes on a sheet pan. Drizzle with olive oil and sprinkle with garlic, red pepper flakes, salt, and pepper.
- Bake for 25 minutes until tomatoes burst and feta softens.
- Cook pasta according to package instructions. Drain and set aside.
- Mash the baked feta and tomatoes into a creamy sauce. Toss with pasta.
- Garnish with fresh basil before serving.
Notes
- Use gluten-free pasta for a gluten-free option.
- Add more red pepper flakes for extra spice.
- Try stovetop method by simmering tomatoes and feta in a pan.
