A simple sheet-pan pasta with roasted cherry tomatoes and creamy feta sauce.

Ingredients

  • 8 oz feta cheese
  • 2 cups cherry tomatoes
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/2 tsp red pepper flakes
  • 8 oz gluten-free pasta
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F.
  2. Place feta and tomatoes on a sheet pan. Drizzle with olive oil and sprinkle with garlic, red pepper flakes, salt, and pepper.
  3. Bake for 25 minutes until tomatoes burst and feta softens.
  4. Cook pasta according to package instructions. Drain and set aside.
  5. Mash the baked feta and tomatoes into a creamy sauce. Toss with pasta.
  6. Garnish with fresh basil before serving.

Notes

  • Use gluten-free pasta for a gluten-free option.
  • Add more red pepper flakes for extra spice.
  • Try stovetop method by simmering tomatoes and feta in a pan.
