This recipe makes an ultra-moist chocolate chip zucchini bread that stays fresh without getting soggy. It’s a perfect quick bread for breakfast, snacks, or back-to-school treats.

Ingredients

  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup vegetable oil
  • 1/2 cup unsweetened applesauce
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1 1/2 cups grated zucchini (about 1 medium zucchini, do not squeeze)
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the granulated sugar, brown sugar, vegetable oil, and applesauce until well combined.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate medium bowl, whisk together the flour, cinnamon, baking soda, salt, and nutmeg.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Gently fold in the grated zucchini and chocolate chips.
  7. Pour the batter evenly into the prepared loaf pan.
  8. Bake for 50-65 minutes, or until a wooden skewer inserted into the center comes out clean. If the top begins to brown too quickly, you can loosely tent it with aluminum foil.
  9. Let the bread cool in the pan for 10-15 minutes before inverting it onto a wire rack to cool completely.

Notes

  • For the moistest bread, do not squeeze the moisture out of the grated zucchini.
  • This bread freezes well. Wrap it tightly in plastic wrap, then in aluminum foil, and freeze for up to 3 months.
  • For a lighter version, you can substitute half of the all-purpose flour with whole wheat flour.
  • To reduce sugar, you can decrease the granulated sugar by 1/4 cup, but this may slightly affect the texture.
