Quick and easy zucchini fritters with minimal ingredients, perfect as a snack or side dish.

Ingredients

  • 2 cups grated zucchini
  • 1/2 cup all-purpose flour
  • 1 egg
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Grate the zucchini and squeeze out excess moisture.
  2. In a bowl, mix zucchini, flour, egg, Parmesan, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat.
  4. Scoop small portions of the mixture into the skillet and flatten into patties.
  5. Cook for 3-4 minutes per side until golden brown.
  6. Drain on paper towels before serving.

Notes

  • For crispier fritters, use an air fryer at 375°F for 10 minutes.
  • Serve with sour cream or yogurt for dipping.
