A comforting Italian-inspired soup with all the flavors of classic lasagna in a bowl.

Ingredients

  • 1 lb Italian sausage or ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 4 cups chicken broth
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8 oz lasagna noodles, broken into pieces
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp chopped fresh basil

Instructions

  1. Brown sausage or beef in a large pot over medium heat.
  2. Add onion and garlic, cook until softened.
  3. Stir in tomatoes, broth, Italian seasoning, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Add broken lasagna noodles and cook until tender.
  6. Serve with dollops of ricotta, mozzarella, and fresh basil.

Notes

  • Use gluten-free noodles for a gluten-free version.
  • Freeze leftovers for easy meal prep.
  • Try slow cooker method: combine all ingredients except cheeses and cook on low for 6 hours.
