Crispy, cheesy eggs with a lacy feta crust, perfect for breakfast or brunch.

Ingredients

  • 2 eggs
  • 1/4 cup crumbled feta cheese
  • 1 tbsp olive oil
  • Salt to taste
  • Black pepper to taste
  • Optional toppings: chili flakes, fresh herbs
  • Toast or wraps for serving

Instructions

  1. Heat olive oil in a non-stick skillet over medium heat.
  2. Sprinkle feta cheese in a circle, leaving space for the eggs.
  3. Crack eggs into the center of the feta circle.
  4. Cook until whites set and feta turns golden and crispy (3-4 minutes).
  5. Season with salt and pepper.
  6. Add toppings if desired.
  7. Serve on toast or wraps.

Notes

  • Use a non-stick skillet for easy flipping.
  • Adjust heat to prevent burning.
  • For runny yolks, cover the skillet briefly.
