1.5 lbs carrots, peeled and cut into uniform pieces
2 tbsp olive oil
2 tbsp unsalted butter, melted
2 tbsp honey
1 clove garlic, minced
1 tbsp balsamic vinegar
1/2 tsp salt
1/4 tsp black pepper
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, toss the prepared carrots with olive oil, melted butter, honey, minced garlic, balsamic vinegar, salt, and pepper until evenly coated.
Spread the carrots in a single layer on a baking sheet.
Roast for 20-30 minutes, or until the carrots are tender and caramelized, flipping them halfway through.
Serve hot.
Notes
For a spicier kick, add a pinch of red pepper flakes or use hot honey.
