Ingredients

  • 1 cup cooked quinoa
  • 1 cup cooked chickpeas
  • 1 cup diced cucumber
  • 1/4 cup chopped pistachios
  • 1/4 cup crumbled feta cheese
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp chopped fresh parsley
  • 1 tsp chopped fresh mint
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine quinoa, chickpeas, cucumber, pistachios, and feta.
  2. In a small bowl, whisk olive oil, lemon juice, parsley, mint, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to coat.
  4. Serve immediately or refrigerate for meal prep.
