Make ultra-thick, gooey chocolate chip walnut cookies at home, just like the famous NYC bakery.

Ingredients

Scale
  • 1 cup cold unsalted butter, cubed
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp cornstarch
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups semi-sweet chocolate chips
  • 1 cup chopped walnuts

Instructions

  1. Preheat oven to 410°F (210°C). Line baking sheets with parchment paper.
  2. Cream cold butter, brown sugar, and granulated sugar in a large bowl until just combined.
  3. Add eggs and vanilla extract. Mix until incorporated.
  4. In another bowl, whisk flour, cornstarch, baking soda, and salt.
  5. Gradually add dry ingredients to wet ingredients. Mix until dough forms.
  6. Fold in chocolate chips and walnuts.
  7. Divide dough into 6 large balls (about 6 oz each). Place on baking sheets, spacing them 3 inches apart.
  8. Bake for 9-12 minutes until edges are golden but centers remain soft.
  9. Let cookies cool on baking sheets for 10 minutes before transferring to a wire rack.

Notes

  • Chill dough for 30 minutes for thicker cookies.
  • Use a kitchen scale to measure dough portions evenly.
  • Underbake slightly for gooey centers.
