Sweet and tender roasted carrots with a glossy maple glaze, perfect for holidays or weeknight dinners.

Ingredients

  • 1 lb carrots, peeled and sliced
  • 2 tbsp butter
  • 2 tbsp maple syrup
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme

Instructions

  1. Preheat oven to 400°F.
  2. Toss carrots with butter, maple syrup, salt, pepper, and thyme.
  3. Spread on a baking sheet and roast for 25 minutes, stirring once.
  4. Serve warm.

Notes

  • Use honey instead of maple syrup if preferred.
  • Add rosemary for extra flavor.
  • Roast until carrots are tender but not mushy.
