2 medium apples (like Honeycrisp or Granny Smith), peeled, cored, and diced
1 tablespoon granulated sugar
1/4 teaspoon ground cinnamon
1/4 cup all-purpose flour
1/4 cup rolled oats
2 tablespoons packed brown sugar
2 tablespoons cold unsalted butter, cut into small pieces
1 tablespoon chopped pecans or walnuts (optional)
Instructions
Preheat your oven to 375°F (190°C).
In a small bowl, toss the diced apples with granulated sugar and cinnamon. Divide the apple mixture evenly between two oven-safe ramekins.
In another small bowl, combine the flour, rolled oats, and brown sugar for the topping.
Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs. Stir in the chopped nuts, if using.
Sprinkle the crumble topping evenly over the apples in each ramekin.
Place the ramekins on a baking sheet to catch any drips.
Bake for 25-30 minutes, or until the topping is golden brown and the apples are tender and bubbly.
Let cool slightly before serving. Enjoy warm, perhaps with a scoop of vanilla ice cream.
Notes
For a lighter version, reduce the brown sugar in the topping to 1 tablespoon and substitute almond flour for half of the all-purpose flour.
To ensure a crunchy topping, make sure the butter is very cold when you cut it into the dry ingredients.
These can be assembled ahead of time and baked just before serving.
