A quick and flavorful breakfast or brunch dish inspired by the viral TikTok trend. Eggs are fried in pesto and served on toast or ricotta.

Ingredients

  • 2 eggs
  • 2 tbsp pesto
  • 1 slice of bread or 1/4 cup ricotta
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat a non-stick pan over medium heat.
  2. Add pesto to the pan and spread it evenly.
  3. Crack the eggs into the pan on top of the pesto.
  4. Cook the eggs to your preferred doneness, about 3-4 minutes for runny yolks.
  5. Season with salt and pepper.
  6. Serve on toast or a bed of ricotta.
