1 cup milk (dairy or non-dairy)
2 tablespoons pumpkin puree
1–2 tablespoons sugar or sweetener, to taste
1 teaspoon pumpkin pie spice
1/2 teaspoon vanilla extract
1/4 cup hot brewed coffee or espresso
Optional toppings: whipped cream, extra cinnamon
Instructions
In a small saucepan, whisk together milk, pumpkin puree, sugar, and pumpkin pie spice.
Heat over medium heat, stirring constantly, until the mixture is hot but not boiling.
Remove from heat and stir in vanilla extract.
Pour the hot coffee or espresso into a mug.
Pour the warm pumpkin milk mixture over the coffee.
Stir well.
Top with whipped cream and a sprinkle of cinnamon, if desired.
For an iced version, let the pumpkin milk mixture cool, then combine with cold coffee or espresso and pour over ice.
Notes
For a syrup version, combine 1 cup water, 1 cup sugar, 1/2 cup pumpkin puree, and 2 teaspoons pumpkin pie spice in a saucepan. Bring to a simmer, then reduce heat and cook for 5 minutes. Strain and store in the refrigerator. Use 2-3 tablespoons per latte.
