A quick and flavorful shrimp scampi pasta with garlicky lemon-butter sauce, perfect for date night or a weeknight meal.

Ingredients

  • 8 oz linguine or spaghetti
  • 1 lb large shrimp, peeled and deveined
  • 4 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1/4 tsp red pepper flakes
  • 1/2 cup dry white wine
  • 1 lemon, juiced and zested
  • 1/4 cup chopped parsley
  • Salt and black pepper to taste

Instructions

  1. Cook pasta according to package instructions. Reserve 1/2 cup pasta water, then drain.
  2. Heat butter in a large skillet over medium heat. Add garlic and red pepper flakes, sauté for 30 seconds.
  3. Add shrimp and cook for 2-3 minutes per side until pink. Remove shrimp and set aside.
  4. Pour white wine and lemon juice into the skillet. Simmer for 2 minutes.
  5. Return shrimp to the skillet. Add cooked pasta, lemon zest, and parsley. Toss to combine, adding reserved pasta water if needed.
  6. Season with salt and black pepper. Serve immediately.

Notes

  • Use fresh shrimp for the best flavor.
  • Substitute chicken broth for white wine if preferred.
  • Add a pinch of Parmesan cheese for extra richness.
