A moist and easy zucchini bread packed with chocolate chips, perfect for using up garden zucchini.

Ingredients

  • 1 1/2 cups grated zucchini
  • 1/2 cup vegetable oil
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350°F. Grease a loaf pan.
  2. In a bowl, mix zucchini, oil, sugars, eggs, and vanilla.
  3. Add flour, baking soda, baking powder, salt, and cinnamon. Stir until just combined.
  4. Fold in chocolate chips.
  5. Pour batter into the loaf pan. Bake for 50-60 minutes or until a toothpick comes out clean.
  6. Cool before slicing.

Notes

  • For a gluten-free version, use gluten-free flour.
  • Freeze slices for up to 3 months.
  • Add nuts for extra crunch.
