1 large yellow onion, sliced into 1/4-inch rings
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
2 large eggs, beaten
1 1/2 cups panko breadcrumbs
1/2 teaspoon paprika
1/4 teaspoon garlic powder

Instructions
Separate the onion slices into individual rings.
In a shallow bowl, whisk together the flour, salt, and pepper.
In a second shallow bowl, place the beaten eggs.
In a third shallow bowl, combine the panko breadcrumbs, paprika, and garlic powder.
Dredge each onion ring first in the flour mixture, shaking off any excess.
Dip the floured onion ring into the beaten eggs, ensuring it’s fully coated.
Press the egg-coated onion ring into the panko mixture, coating it evenly on all sides. Place the breaded rings on a plate or baking sheet.
Preheat your air fryer to 375°F (190°C).
Arrange the breaded onion rings in a single layer in the air fryer basket. You may need to cook in batches.
Lightly spray the onion rings with cooking spray.
Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.
Serve immediately with your favorite dipping sauce.
Notes
For extra crispiness, you can double-coat the onion rings: flour, egg, panko, egg, then panko again.
