  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 3/4 cups milk
  • 1 large egg
  • 1/4 cup unsalted butter, melted
  • 1 cup grated or finely diced apple
  • For Cinnamon Butter: 1/4 cup unsalted butter, softened
  • 1 tablespoon brown sugar
  • 1/2 teaspoon ground cinnamon

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  2. In a separate bowl, whisk together milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Gently fold in the grated or diced apple.
  5. Heat a lightly oiled griddle or frying pan over medium heat.
  6. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  7. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  8. While pancakes cook, prepare the cinnamon butter: In a small bowl, combine softened butter, brown sugar, and cinnamon. Mix until smooth.
  9. Serve pancakes warm with a dollop of cinnamon butter.
