A comforting make-ahead breakfast casserole featuring cheese blintzes baked in a creamy custard, perfect for holidays or brunches.

Ingredients

  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup milk
  • 1 (16 ounce) package frozen cheese blintzes
  • Optional: Blueberry or strawberry sauce for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, beat the softened cream cheese and sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract, salt, and milk until well combined.
  4. Arrange the frozen cheese blintzes in a single layer in a greased 9×13 inch baking dish.
  5. Pour the cream cheese mixture evenly over the blintzes.
  6. Bake for 30-35 minutes, or until the custard is set and lightly golden.
  7. Let the casserole cool slightly before serving. Serve warm, with optional fruit sauce if desired.

Notes

  • You can substitute plain yogurt for sour cream in the custard mixture.
  • This casserole can be assembled the night before and refrigerated. Add a few extra minutes to the baking time if baking from cold.
  • Leftovers can be covered and refrigerated for up to 3 days. Reheat gently in the oven or microwave.
