These cranberry brie bites are a perfect holiday party appetizer, combining creamy brie and tart cranberry sauce in a flaky puff pastry shell.

  • 1 sheet puff pastry, thawed
  • 4 ounces brie cheese, rind removed, cut into 12 pieces
  • 1/4 cup whole berry cranberry sauce
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon fresh rosemary, chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a mini muffin tin.
  2. Unfold the puff pastry sheet on a lightly floured surface. Cut it into 12 equal squares.
  3. Gently press each puff pastry square into a mini muffin cup, creating a small well in the center.
  4. Place one piece of brie cheese into each pastry-lined muffin cup.
  5. Spoon about 1 teaspoon of cranberry sauce over the brie in each cup.
  6. Brush the edges of the puff pastry with the beaten egg wash.
  7. If using, sprinkle chopped rosemary over the top.
  8. Bake for 12-15 minutes, or until the puff pastry is golden brown and puffed, and the cheese is melted and bubbly.
  9. Let the bites cool in the muffin tin for a few minutes before carefully removing them. Serve warm.

Notes

  • For a richer flavor, you can add a small piece of candied pecan or walnut on top of the cranberry sauce before baking.
  • If you don’t have a mini muffin tin, you can form these on a baking sheet, but they may spread more.
  • Ensure your puff pastry is fully thawed but still cold for the best results.
