A luxurious chocolate pie with a smooth, mousse-like filling in a pre-baked crust, topped with whipped cream and chocolate shavings.

  • 1 (9-inch) pre-baked pie crust
  • 6 ounces bittersweet chocolate, chopped
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3 large eggs, separated
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup heavy cream, whipped
  • Chocolate shavings, for garnish

Instructions

  1. Melt the chopped bittersweet chocolate in a double boiler or microwave. Set aside to cool slightly.
  2. In a large bowl, beat the softened butter until creamy.
  3. Add the egg yolks one at a time, beating well after each addition.
  4. Gradually beat in the powdered sugar until the mixture is smooth and fluffy.
  5. Stir in the melted chocolate and vanilla extract until well combined.
  6. In a separate clean bowl, beat the egg whites with the salt until stiff peaks form.
  7. Gently fold the beaten egg whites into the chocolate mixture until just combined.
  8. Pour the filling into the pre-baked pie crust.
  9. Chill the pie for at least 4 hours, or until firm.
  10. Before serving, top with whipped cream and chocolate shavings.

Notes

  • For a safer option, you can use pasteurized eggs or a cooked custard method for the filling.
  • Ensure your bowl and beaters are completely clean and dry when whipping egg whites.
  • Chill the pie thoroughly to achieve the best texture.
