A classic French-inspired side dish featuring crisp-tender green beans tossed with toasted almonds and butter. This recipe offers a lighter, brighter alternative to heavier vegetable preparations, perfect for balancing rich meals.

Ingredients

Scale
  • 1 pound fresh green beans, trimmed
  • 4 tablespoons unsalted butter
  • 1/2 cup sliced almonds
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Blanch the green beans in boiling salted water for 3-5 minutes, until crisp-tender. Immediately drain and rinse with cold water to stop the cooking and preserve their vibrant green color. Set aside.
  2. In a large skillet, melt the butter over medium heat.
  3. Add the sliced almonds to the melted butter. Cook, stirring frequently, until the almonds are golden brown and fragrant, about 3-5 minutes. Watch carefully to prevent burning.
  4. Add the blanched green beans to the skillet with the toasted almonds and butter.
  5. Toss gently to coat the beans evenly.
  6. Season with salt and black pepper to your preference.
  7. Cook for another 1-2 minutes, just to heat the beans through.
  8. Serve immediately.

Notes

  • For extra flavor, you can add a squeeze of fresh lemon juice just before serving.
  • Ensure your almonds are toasted evenly by stirring them constantly in the butter.
  • If you prefer a softer bean, you can steam or boil them for a few minutes longer before the cold water rinse.
