2 pounds Yukon Gold potatoes, peeled and cut into 1-inch chunks
1 cup water or chicken broth
1/2 cup milk, warmed
4 tablespoons butter
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste
Instructions
Place the potato chunks in the Instant Pot.
Add the water or broth.
Secure the lid and set the valve to sealing.
Cook on high pressure for 8 minutes.
Allow for a natural pressure release for 10 minutes, then carefully quick release any remaining pressure.
Drain the potatoes thoroughly.
Return the drained potatoes to the Instant Pot.
Add the warmed milk, butter, salt, and pepper.
Mash the potatoes with a potato masher until smooth and creamy.
Taste and adjust seasoning if needed.
Serve immediately or use the ‘Keep Warm’ function to hold until serving.
Notes
For creamier mashed potatoes, you can use half-and-half or heavy cream instead of milk.
Add garlic powder or chives for extra flavor.
If you don’t have an Instant Pot, you can boil the potatoes on the stovetop until tender.
