A simple and comforting casserole made with leftover turkey, perfect for a low-fuss meal after a holiday.

Ingredients

  • 2 cups cooked, shredded or diced turkey
  • 1 cup cooked rice or pasta
  • 1 cup mixed vegetables (frozen or fresh, e.g., peas, carrots, corn)
  • 1/2 cup gravy or cream of mushroom soup
  • 1/4 cup chopped onion (optional)
  • 1/2 cup shredded cheese (cheddar, Monterey Jack, or your favorite)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the cooked turkey, cooked rice or pasta, mixed vegetables, gravy or soup, and chopped onion (if using).
  3. Season with salt and pepper to your taste.
  4. Stir everything together until well combined.
  5. Pour the mixture into a greased 8×8 inch baking dish or similar casserole dish.
  6. Top evenly with the shredded cheese.
  7. Bake for 20-25 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
  8. Let stand for a few minutes before serving.

Notes

  • You can add other leftovers like mashed potatoes or stuffing for a layered bake.
  • Feel free to adjust the vegetables based on what you have available.
  • A sprinkle of breadcrumbs on top before baking adds a nice crunch.
