This is a fresh, light salad featuring sweet mandarin oranges, crisp greens, and crunchy candied almonds, finished with a simple orange vinaigrette. It works well as a side dish for gatherings.

  • 2 (11 ounce) cans mandarin oranges, drained
  • 1/2 cup sliced almonds
  • 1 tablespoon sugar (for almonds)
  • 1/4 cup olive oil
  • 2 tablespoons fresh orange juice
  • 1 tablespoon white wine vinegar
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 cup dried cranberries (optional)

Instructions

  1. Prepare the candied almonds: Place the sliced almonds and 1 tablespoon of sugar in a small, dry skillet over medium heat. Stir constantly until the sugar melts and coats the almonds, about 3 to 4 minutes. Immediately transfer the almonds to parchment paper to cool completely. Break apart any large clusters.
  2. Make the dressing: In a small bowl, whisk together the olive oil, orange juice, white wine vinegar, honey, salt, and pepper until well combined.
  3. Assemble the salad: In a large bowl, combine the mixed greens, drained mandarin oranges, and dried cranberries, if using.
  4. Dress and toss: Pour the dressing over the salad ingredients. Gently toss to coat everything evenly.
  5. Serve immediately: Top the salad with the cooled candied almonds just before serving.
