1 box yellow cake mix
Ingredients for cake mix (eggs, oil, water)
Green food coloring
1 cup unsalted butter, softened
3 cups powdered sugar
1/4 cup milk
1 teaspoon vanilla extract
1/4 cup blueberries
1/4 cup canned lychees, drained
1/4 cup frosting
Black edible marker
Instructions
Prepare cake mix according to package directions. Divide batter into two bowls. Tint one bowl with green food coloring.
Bake cupcakes in liners according to cake mix directions. Let cool completely.
For the frosting, beat butter until creamy. Gradually add powdered sugar, alternating with milk, until smooth and fluffy. Stir in vanilla extract.
Frost each cupcake with green frosting. Use a grass tip or star tip for texture.
For the eyeballs, place a blueberry on top of a lychee. Use a small dab of frosting to secure the blueberry to the lychee.
Place one lychee eyeball on each frosted cupcake.
Use the black edible marker to draw a pupil on each blueberry.
If the pupil bleeds, you can dab it with a small amount of white frosting to cover it and redraw.
Notes
For a boxed cake mix shortcut, use your favorite yellow cake mix.
To prevent candy eyes from bleeding, ensure your frosting is completely dry before placing them.
These cupcakes can be stored in an airtight container at room temperature for up to 2 days.
For travel, place cupcakes in a sturdy container to prevent damage.
