A straightforward recipe for crispy, caramelized Brussels sprouts, perfect as a healthy side dish for any meal.

  • 1.5 pounds Brussels sprouts
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1 clove garlic, minced, or 1 tablespoon balsamic glaze

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Trim the tough ends off the Brussels sprouts and remove any yellow outer leaves. Cut larger sprouts in half.
  3. In a medium bowl, toss the Brussels sprouts with olive oil, salt, and pepper until evenly coated. If using, add the minced garlic.
  4. Spread the Brussels sprouts in a single layer on a baking sheet.
  5. Roast for 20-25 minutes, or until tender on the inside and crispy and browned on the edges.
  6. If desired, toss with balsamic glaze after roasting.

Notes

  • For extra crispy sprouts, roast them at a higher temperature like 425°F (220°C) for a slightly shorter time.
  • Don’t overcrowd the baking sheet; use two if necessary to ensure even roasting.
  • A touch of sweetness from balsamic glaze or a drizzle of honey can balance any bitterness.
