A creamy and comforting potato casserole, perfect as a side dish for any meal.

  • 4 cups thinly sliced potatoes (about 2 lbs)
  • 1/2 cup chopped onion
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 2-quart baking dish.
  2. Arrange the sliced potatoes in the prepared baking dish. Sprinkle the chopped onion over the potatoes.
  3. In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly.
  4. Gradually whisk in the milk until smooth. Bring to a simmer, stirring constantly, until the sauce thickens.
  5. Remove from heat and stir in salt, pepper, and paprika. If using cheese, stir it in until melted.
  6. Pour the sauce evenly over the potatoes and onions.
  7. Bake for 45-60 minutes, or until the potatoes are tender and the top is golden brown and bubbly.
  8. Let stand for 5-10 minutes before serving.

Notes

  • For a smoother sauce, you can whisk the milk in gradually.
  • If you prefer a richer flavor, use half-and-half instead of milk.
  • For a cheesier dish (potatoes au gratin), increase the cheese to 1 1/2 cups and sprinkle some on top before baking.
  • Ensure your potatoes are sliced thinly and evenly for consistent cooking.
