1 (3-4 pound) boneless, skin-on turkey breast
2 tablespoons unsalted butter, softened
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup chicken broth
Instructions
Preheat your oven to 375°F (190°C).
In a small bowl, combine the softened butter, thyme, rosemary, salt, and pepper. Mix well to create a herb butter.
Carefully loosen the skin from the turkey breast by gently sliding your fingers between the skin and the meat. Spread about half of the herb butter evenly under the skin.
Rub the remaining herb butter all over the outside of the turkey breast skin.
Place the turkey breast in a roasting pan. Pour the chicken broth into the bottom of the pan.
Roast for 1 hour and 15 minutes to 1 hour and 30 minutes, or until a meat thermometer inserted into the thickest part of the breast registers 165°F (74°C). Baste the turkey with the pan juices every 30 minutes.
If the skin starts to brown too quickly, you can loosely tent the breast with aluminum foil.
Once cooked, remove the turkey breast from the oven and let it rest for 10-15 minutes before slicing.
Notes
For extra flavor, you can add a halved lemon and a few sprigs of fresh rosemary to the roasting pan.
